Strawberry forced Rhubarb Sorbet

Collections: Gelato- Distillery shop, Gelato- King St shop

A beautiful creamy tangy Spring gelato.

Forced Rhubarb grows in sheds in the dark. The pale beautiful pinks and greens are from the lack of light, some growers still harvest with candlelight. The sprouts looking for light grow so fast farmers can hear it pop and squeak it’s way out of the soil. wow!

Forced rhubarb is tender, elegant and sweeter than the thick sour stalks of the summer variety. These beauties were grown an hour North of here by the fine peeps at Lennox Farms. The strawberries are everlastings, the last beautiful crop from last year, preserved for this rite of Spring batch of Sorbet.

Gelato and sorbet is made in our kitchen that uses nuts (including tree nuts), eggs, fruit and milk/cream.
