Eating meringue is a beautiful experience—crunchy and melty at the same time. Deceptively simple in ingredients the science of egg white and sugar is the lovechild of marshmallows and whipped cream frothed up into a sweet fluffy cloud, baked until delightfully crisp.

As chocolate makers how could we not make a choco-meringue? The cloud is laced with chocolate and finished with nutty roasty cacao nibs from Piaroa in Venezuela.
