Cacao pod fruit Gelato


Chocolate starts in the forest as a teeny tiny blossom that matures into a cacao pod. Inside each pod are cacao beans surrounded by a juicy fruit. During harvest when the pod is cracked open some of the fruit is scooped before letting the cacao beans ferment and dry to make chocolate from.

We were lucky to get a very small amount of the scooped cacao fruit which we spun into a luscious gelato. What's it taste like? Fresh notes of soursop, lychee and plum blossoms. A rare opportunity to try cacao fruit.

Gelato and sorbet is made in our kitchen that uses nuts (including tree nuts), eggs, fruit and milk/cream.
