A very small special stash of cacao from Vanuatu. Before we make the chocolate into bars, Ramage will be released as a cacao pod.
Made with cacao from the Village of Pinalum on the north side of Malekula island in Vanuatu. The village sits in the middle of an old heirloom Amelonado cacao forest planted in the 1800s. Wet cacao is gathered from a collection of small farms and brought to a central fermentary and drying facility.
The team in Pinalum came up with the name Ramage (Rah-mah-gee)... it means "we revived something everyone else had given up, and we made it something great" Thank-you Olivier Ferandez, Lily and the crew for all the care that goes into this very special cacao.
The edible pod is life size like a cacao pod in the wild. The pod sits on a nest sculpted from Piedmont hazelnut & chocolate are smooshed together then hand cranked through an old school Venetian pasta press.
