Rare find. A tiny very limited batch of Durian Chocolate cacao pods.
Durians are one of the most polarizing fruits on the planet, for some they are too intense, but for the Durian appreciation club the durian love is strong. Durians are the ultimate dance of sweet and umami, inside the spiky shell is an unctuous fruit with notes of vanilla custard, fresh cream, and bananas mixed with blue cheese and caramelized onions.
Sculpted into a cacao pod. Torched to bring out the pretty details in the pod and to give the Durian chocolate a roasty creme brûlée flavour.
The pod is nuzzled onto a gianduja nest made by smooshing Piedmontese hazelnuts with chocolate ( the good stuff). The Gianduja is hand cranked through an old school Venetian pasta press and sculpted into a gorgeous nest.
Packed in a beautiful tulip shaped, reusable Weck jar. (Yay for zero waste packaging)
