Lilac Gelato


The sweet smell of lilacs is an unmistakable sign of Summer— fluttery purple blooms release a stunning honey-hued perfume. The flowers do not contain any oil making their essence impossible to distill. This is why there are no lilac absolutes and almost all lilac scents are synthetic.

So how does one capture their short-lived aroma naturally?

Lilacs are totally edible from the olive (wow!) family. We picked baskets of fluffy blooms from our tree and spent a very zen day hand-plucking each little flower off their stems (leaves and stems are bitter). The flowers were washed and immersed in milk to let the flowers infuse then spun it into the dreamiest creamy lilac gelato.

Gelato and sorbet is made in our kitchen that uses nuts (including tree nuts), eggs, fruit and milk/cream. Could contain traces of any of these ingredients.
