Near Susucayán, high in the mountains of northern Nicaragua close to the Honduran border, Giff found a grove of soaring wild cacao trees identified as ancient Criollo.

Giff brought back cuttings and grafted them at his farm. After 10 years of nurturing the trees, he finally had enough cacao for a tiny harvest. We are the lucky recipients of this exceptionally rare microlot. The beans are tiny, creamy white inside. When we tasted our first batch of chocolate... silence. We knew how deeply special this cacao was.

Origin: Susucayán

→
Matagalpa, Nicaragua
Cacao content: 70%
Tasting notes: caramel, sweet almond, malt, apple blossoms & honey

65g bar

*May contain traces of peanuts, tree nuts, and dairy

//cdn.shopify.com/s/files/1/0307/7585/files/suscayan_1ff63ea7-7717-46b0-b0fc-e29fa0a1085c.jpg?v=1791586214
