How cool, and visually striking is this chocolate pod? One side is made with cacao fruit, the other side made with cacao beans from the SAME pods grown on the Costa Esmeraldas farm in Ecuador.
The cacao is grown, harvested, fermented and sun-dried by our friends the Salazar family. Their cacao just won Gold in the Cacao of Excellence competition in Amsterdam last month. Congrats to their team on the farm.
Cacao fruit chocolate (rare find)
Inside a cacao pod cacao beans are surrounded by juicy pulp that tastes like a mashup of soursop, pineapple, lychee and blossoms. The pulp from Costa Esmeraldas is fermented giving the chocolate a beautiful complexity.
70% Dark Chocolate Mr Salazar
The steep 100-hectare site is planted with Nacional-Venezolano Amarillo cacao. The pods are transported daily during harvest, beans meticulously fermented and sun-dried on the farm. Their land is beautiful—lush namesake emerald green hills layered in every direction.
Tasting notes: lemon, bread, cherries, balsamic vinegar, brownies, green bananas
Hazelnut nests
The pod is nuzzled onto a hazelnut chocolate nest made with roasted Piedmont hazelnuts, smooshed with chocolate then hand cranked through an old school Venetian pasta press and sculpted into a nest for the pod to sit on..
These pods are a very special limited edition, hand-scooped. Packed in a beautiful tulip shaped, reusable 1L Weck jar. (Yay to zero waste packaging)
Shipping: For out of Toronto and International shipping the nests may unravel slightly and the pods may shift a little during the journey. If you are ok with this caveat ( it's easy to reset to its beautiful self.) we will pack it with all our might for safe travel.
