Chaisutti Farm is in Chanthaburi, eastern Thailand, a lush tropical fruit-growing region near the Cambodian border. Chanthaburi means “City of the Moon,” its moon rabbit, is a beloved symbol throughout the region.
Suriya and Boom grow Chumphon 1 cacao on their family farm and work with a network of neighbouring farmers, from small farms to tiny family plots. Together, their harvests are fermented and dried at Chaisutti, creating another source of income for the local farming community.
Earlier this year we visited Chanthaburi, met the farmers and wandered through the farms that grow this beautiful cacao we now have in our hands. Seeing it all firsthand, from the post-harvest set-up to the care, knowledge and passion behind this cacao, was truly magical.
