This beautiful cacao is grown in the hills of Bà Rịa-Vũng Tàu province. 30-40 small 2-3 acre family owned farms are organized as fermentary groups, wet beans are transported to one central place for fermenting in wooden boxes.
The beans are from Marou Faiseurs de Chocolat in Saigon who work directly with the farmers. The cacao is special to us, not only for its exceptional flavours, but also as a fond reminder of a beautiful friendship that started during a monsoon in Saigon.
The edible pod is life size like a cacao pod in the wild. The pod sits on a nest sculpted from Piedmont hazelnut & chocolate smooshed together then hand cranked through an old school Venetian pasta press.
