Caramel is sugar allowed to change, run a little wild. All that buttery richness with a bit of smokiness from the burnt sugar. A generous dash of sea salt, because caramel and salt have always brought out the best in each other.

Spun Stracciatella style by pouring a stream of melted chocolate while spinning. When the chocolate touches the gelato it solidifies into ethereal shards that will melt again in your mouth. Think chocolate chip but way better.

The chocolate is our Ucayali River, a dark 70% chocolate made with cacao beans from small family run farms along the Ucayali River in Peru.

Gelato and sorbet is made in our kitchen that uses nuts (including tree nuts), eggs, fruit and milk/cream. Could contain traces of any of these ingredients.
