A rare cacao from our friend Giff Laube, a cacao conservationist who has spent years searching for surviving Criollo in Nicaragua and Central America. Near Susucayán, high in the mountains of northern Nicaragua close to the Honduran border, Giff found a grove of soaring wild cacao trees identified as ancient Criollo.

Giff brought back cuttings and grafted them at his farm. After 10 years of nurturing the trees, he finally had enough cacao for a tiny harvest. We are the lucky recipients of this exceptionally rare microlot. The beans are tiny, creamy white inside. When we tasted our first batch of chocolate... silence. We knew how deeply special this cacao was.
